It’s no secret that vegetables are healthy. But what do you do if you really dislike all things vegetable?
Sofia Antonsson, a registered dietitian, gives her best advice.

Reader question: “I hate vegetables, is there any alternative to eating healthy? My girlfriend keeps telling me to eat more vegetables, but I just don’t like them. What can I do?”

The dietitian answers: Find your favorites

Hi! It doesn’t sound good, but I totally understand that you can’t like everything, says Sofia Antonsson, registered dietitian.

This is how I think: There are so many vegetables out there, and the beauty is that you just have to find some that you like. Try making a good dressing, then it will be more fun to eat. Find some good recipes with oil and vinegar as a base and flavor with, for example, honey, mustard, lemon or lingonberry. My favorite is grated carrot with lemon dressing.

It doesn’t have to be super varied, the important thing is that you get some varieties to meet the need for fiber, vitamins and minerals. You can also add vegetables to your food. Try black beans, lentils or chickpeas in a meat sauce, spinach in an omelette or carrot soup.
